175g Quick cook polenta
180 ml Water
250ml Milk
1/4 tbs Ground cumin
1/4 tsp Ground coriander
1/4 tsp Ground fennel seed
Makes:
- Blend the polenta in a robo coupe or blender
- Bring milk, water and salt to the boil
- Whisk in the polenta and whisk continually until it thickens
- Now add the spices
- Spoon a small amount of the mixture onto a sheet of baking parchment
- Place another piece of parchment on top of the mixture and roll out until it is a thin layer of spiced polenta, ideally poppadom shaped (round), between the two sheets
- Bake at 170c for roughly twenty minutes
- The polenta should curl and crisp when ready. Otherwise, it needs more time
