Polenta Poppadoms

175g Quick cook polenta
180 ml Water
250ml Milk
1/4 tbs Ground cumin
1/4 tsp Ground coriander
1/4 tsp Ground fennel seed
Makes:


  • Blend the polenta in a robo coupe or blender
  • Bring milk, water and salt to the boil
  • Whisk in the polenta and whisk continually until it thickens
  • Now add the spices
  • Spoon a small amount of the mixture onto a sheet of baking parchment
  • Place another piece of parchment on top of the mixture and roll out until it is a thin layer of spiced polenta, ideally poppadom shaped (round), between the two sheets
  • Bake at 170c for roughly twenty minutes
  • The polenta should curl and crisp when ready. Otherwise, it needs more time
